Smoked sausage, potato and capsicum medley
Simple and delicious. This dish can work just a easily as a main, or as a accompaniment. The tomato pesto really adds a great depth of flavour.
Serves 3
400g new or salad potatoes, diced
1 Tbsp oil
1 red capsicum, diced
1 courgette, sliced
227g reduced fat smoked pork sausage, sliced
1 Tbsp tomato pesto
Boil the potatoes for approx 8 minutes or until tender and then drain.
Heat oil in a large frying pan.
Stir fry capsicum, courgette and sausage for 5 minutes.
Add potatoes and pesto and cook for 1-2 minutes.
Serve immediately.
