Nutrients in potatoes

Vitamin C
Necessary for healthy connective tissue - e.g gums, tendons, ligaments, skin, bone and cartilage. Vitamin C assists healing processes such as fighting infections. Vitamin C is a protective antioxidant preventing oxidative stress from free radicals. Vitamin C helps absorb iron from food.

B Group Vitamins
This group plays an essential role in the release of energy from food. Some have other specific roles such as folate which is necessary for normal blood formation and prevention of defects such as spina bifida in unborn babies. Thiamin helps keep nerves and muscles healthy. e.g. B6, Folate, Thiamin (Vitamin B1) and Niacin

Potassium
Regulates fluid and mineral balance and hence maintains blood pressure. Controls the working of muscles and nerves.

Iron
Important part of red blood cells. Helps carry oxygen around body.

Magnesium
Vital for many biochemical processes in the body including muscle, nerve, blood, immune and energy systems.

Fibre
This diverse group of compounds, many of which are antioxidants e.g. phenolics (flavonols and anthocyanins) and carotenoids, have shown a wide range of protective health benefits.

Phytonutrients
Helps to keep the bowels healthy and prevent constipation. Is important in weight control.

Carbohydrates
An important source of energy for the body.
