Iron
Iron is an essential part of red blood cells and its role is to help carry oxygen around the body. Low iron stores can cause problems like excessive tiredness and lethargy. Other problems caused by not having enough include poor concentration, poor appetite, muscle weakness and increased susceptibility to colds and infections. Iron is very important in brain development - especially for children.
Whilst red meat is the best source of iron, potatoes make a significant contribution assisted by the Vitamin C present which increases iron absorption.
One medium potato (175g) gives around 7% of daily iron.
