According to expert potato growers, New Zealand is very unique in our ability to harvest potatoes all year round!
Because of our temperate climate when potatoes are ready, they can be stored in the ground and keep just as well as they do in a cool store.
We have about 25 different varieties on the fresh market; with plenty more used for processed potato products. With so many to choose from it is very important to select the right potato for the right job. Growers and packers carry out ‘cook testing’ throughout the season on all of their potatoes which allows us all to know what the potato will be best used for.
The general rule is: waxy are best for boiling and salads, while floury are best for roasting and mashing. But some potato varieties actually change throughout the season- so checking this regularly is critical for consumers! We have loads more information on potato varieties here.
